Not sure if you need both MO and 2R for base grains, but I’m guessing you just want some malt complexity? I would say go with it.

Also, with a # of crystal, I would mash @ 150-151, reduce base grains by a #, and add a # of dissolved simple sugar at about day 4 to the fermentation. This will help ensure you get full attenuation. Most IIPA’s I taste are way too sweet for my palette.

Single-hopped with Cascade is a bold move. In a IIPA, I am usually looking for a pretty complex hop aroma, which could be achieved by mixing in some Amarillo, Simcoe, Cent (a ‘must’ IMHO) and/or some of the newer tropical varieties. Me personally, I would add .5-1 oz of mash hops of either CTZ or Chinook, and a .5-1oz FWH of the same (or blend the two @ each addition) to give a little hint of dankness/earthiness. The timing of your hop additions looks good. I also like to use Magnum for my bittering charge in IPA/IIPAs.

Do you have ferment temp control? Pitch this in the mid 60’s and raise it up 1* per day after day 3 if so. The other problem I have with IIPA’s is fusel alcohols.

Ya I’ve been adding a few lbs of MO as part of my base malts just to give a little more dimension. At least to my IPAs lately. I copied and pasted from my calc and forgot to adjust the temps. I plan on fermenting at 64 for the first 3/4 days and them letting it raise naturally till it hits 68 and keeping it there.

I also plan on mashing at a lower temp for a lighter more fermentable wort, again forgot the presets.

I had .5 chinook as a FWH but decided I’d go with a single hop profile and have never done so with cascade. I doubt it’ll be bad? Normally I use Columbus or centennial as a bittering for my IIPA too. I suppose i could change it up.

IBUs are a little low for my taste. Cascade is pretty harsh as a bittering hop though, so it’ll probably balance out.

Not enough late addition hops in that second go round of the recipe. Drop those 30 and 20 minute additions to below fifteen minutes. Also, not sure a half pound of munich will do much for you. That might be just me but I would drop it.

If you are looking for a little more malt I say up the Munich and drop the Maris Otter.

I’d throw some Galaxy hops into the later additions (especially dry hopping) and probably use them to sub-out the centennial altogether.
