US04 or US05 in a robust Porter. I’m not concerned with tradition.
Well 04 is English ale and Porters were originally named for English train porters that seemed to like that style so tradition wise, that would be the choice. However I would go with whatever you like best.
Is that really true about train porters ? Sounds like somebody made that up
From what I have read there really was no proof that was true but more that it was an ale suited for the working class so it may or may not be factual. Does kind of make sense though. Also Fullers Porter is and excellent example of a Porter so if the train porter story isn’t real, Fullers sure is.
I vote for S-04, just to give a little English character. I prefer 04 over Nottingham for a dry “English yeast”.
If you don’t want any esters, then use the US-05, but S-04 isn’t overly estery if you ferment in mid 60s.
I’m not going to use notty. The last time I brewed my rum barrel Porter I think I way under pitched with 04. I have a big jar of 05 slurry but I reall want to like the 04 so maybe I’ll throw two or three packets.
