Wanted: All Grain Chimay Blue Recipe

Has anyone successfully brewed an all grain Chimay Blue clone?

If so, please post your recipe.

permanent bump

Don’t have recipe handy at the moment. But have you read BLAM yet? My ideas came from there. Pale malt, Munich, some dark candy sugar and 1214. That is really all there is too it I’ll try to post specifics later

Have you brewed a Chimay Blue?

I’ve gotten close, but have not nailed it yet.

12.00 lb Pale Malt (2 Row) Bel (3.0 SRM) Grain 40.68 %
10.00 lb Munich Malt (9.0 SRM) Grain 33.90 %
2.00 lb Wheat Malt, Bel (2.0 SRM) Grain 6.78 %
1.00 lb Caramunich Malt II (60.0 SRM) Grain 3.39 %
0.50 lb Special B Malt (180.0 SRM) Grain 1.69 %
1.00 oz Magnum [14.00 %] (60 min) Hops 21.1 IBU
1.00 oz Hallertauer Hersbrucker [3.20 %] (60 min) Hops
1.00 oz Hallertauer Hersbrucker [2.50 %] (15 min) Hops
4.00 lb Candi Sugar, Dark (80.0 SRM) Sugar 13.56 %
1 Pkgs Belgian Ale (Wyeast Labs #1214) Yeast-Ale

10 gallon batch. The above should get you close. Pitching rate and fermentation temps are very important, and you kind of have to play around with those to get this dialed in. You could take the munich out and go all Pale, but I kind of like the extra depth the munich adds. Chimay itself uses wheat starch instead of wheat malt, the percentage wheat malt is just a wild guess. And if you haven’t read Brew Like a Monk, go buy it now. Good luck
