Variety in honey

never heard of this before, but it has me intrigued.

anyone use tamarisk honey in a mead before?

I have not, but looks like a Tamarisk Honey Mead placed BOS in the NM State Fair in 2008.
From the sounds of the description it might be best to tone it down with another variety.

it does look & sound intense. I might get a hold of some & make a batch, just to say I did. just like with agave. :roll:

Sulfur and Sodium might be a concern. It would also be nice to know what the pH is.

I was thinking of blending with some wildflower honey from the same region at a 2:1 ratio. it’ll end up like a desert night: dark & dry… :lol:
