Useing Wyeast

When useing Wyeast, once it fully inflates would that not be a yeast starter? Or if I leave it sit longer, would that be an equivalent to a larger starter?

No, the packet you break is just a tiny amount of wort. Enough for the yeast to consume and produce the CO2 that inflates the bag to show you they are alive.

You can pitch the bag if you want. Many a tasty brew has been made that way. Or, you can make a proper starter.

The packet inside is mainly for proving your yeast is healthy. You need a starter to get cell counts into the proper range for pitching. Check out Mr Malty
