I’m planning a witbier. I don’t have any noble hops on hand, but I have 8 oz of 2012 American grown Perle. I’m thinking this would be a reasonable substitute–especially given the subdued role hops play in this style.
Thoughts?

I agree.
Most any non assertive hop would probably work.
Avoid chinook.
A hint of mint in a wit sounds great. Thats what I understand Perle brings, although I haven’t used American and really only used Perle a couple of times and in beers where subtle aromas/flavors wouldn’t show through.
