Exact thing I see during a fermentation going on right now
I’ve used tons of Saflager 23. It works fine. Though when I split a batch and used half WY pilsener yeast for half, I did find it a little cleaner. But I would still use the 23 with no issues.
I made the worst beers in my 15 years of brewing with S23. I’ll never touch it again. Even a year of lagering couldn’t get rid of the disgusting fruitiness.
A starter with dry yeast is not only unnecessary but could be detrimental.
