Hi folks, first batch of cider here and I had a question for you all about topping off. After my first racking the volume in the 3 gal carboy is pretty low (about .5 - .75 gal short). Part of this is loss from the lees, part is that I had no idea how much this would foam during fermentation so I was conservative when filling the carboy initially. My question is, can I top off with left over juice? Obviously (or at least hopefully) this will kick off fermentation again but seems sensible to me - just looking for a sanity check I guess. I don’t have a 2gal carboy so racking into a smaller vessel is not an option right now…
