Sure, theres plenty of time. They are tasty fresh and a great summer beer. I’d suggest WY3711 for your yeast, the stuff is voracious and finishes very dry but with great mouthfeel. The other one has a tendency to get stuck and you wouldn’t really have time to deal with that.
Shoot for something around 1.050 with some table sugar to dry it out to the 5.5-6% ABV range,
You could be drinking it in a month.
