Tasted my two flash fermented brews today

Well, popped a bottle each of my overpitched gallon batches of the two White House beers.

I know they are still young, being only 4 weeks old, but here are my results.

The Honey Porter tastes great as is, has a good mouth feel, but almost no head retention(which I could care less about) You can also really tell it has a high ABV. Wish I would have had a hydrometer when I brewed them to see what they are at now. I really like it and cannot wait for it to age a bit.

The honey Ale on the other hand…

It foamed up really big when I poured it, then a minute later all the head was gone. It’s not totally watery, but has less body than the porter, and has an extremely bitter finish. By taste alone I would say it has more alcohol than the porter too. But, all is not lost, as the Wife likes it. Also, it seems to be darker than when I bottled it, almost a newcastle color.

Well you made beer, and it sounds tasty. Give it 3-4 weeks more and see what a difference that the time makes. A bland beer could end up being a good one after a little conditioning.
