Sweet Potato Ale

I had some really good craft brew about a month ago at Mad Beach Craft Brewing Company. One of the beers was a sweet potato ale. It was awesome. I was wondering if anybody would have any ideas on how to recreate it through extract/partial mash methods. I was thinking a possibility would be using the American Wheat kit, X amount of sweet potatoes, and possibly some syrup? Any thoughts?

I’ve had some really good luck using advice I’ve gotten here before, so I thought I’d see what ideas could be generated. Thanks in advance.

No personal experience, but my guess is that you could treat the sweet potato as you might use pumpkin. ie. Cook it to gelatinize the starches, then mash it with some 6-row or 2-row to convert the starches to sugar.

Keep in mind that you’ll have to mash the sweet potatoes. Here are some ideas…
