I planned to brew an Amarillo Amber for entry in this years Spirit of Free Beer competition, but low and behold there is an Amarillo shortage! I decided on Ahtanum for my now Almost Amarillo Amber but I’ve never used Ahtanum before and wanted to hear from folks who have used it, especially in place of Amarillo. I’ll be using it in conjunction with Simcoe.
I think it’ll work out to be a good combo, but Amarillo brings a flowery component for my nose that I don’t get from Ahtanum. If you could get a little Nugget I think it would be closer to Amarillo.
