OK I’ll freely admit that this recipe doesn’t fit any style guidelines that I know of. Basically I mad a German Rauchbier and painted it black using Carafa 2 and Chocolate Malt. I’ve got it on tap right now and the result is smooth, smokey, and damn tasty. If anyone has a style they think I could call this let me know and I’ll look into it. Either way I loved my results and figured I’d share.
Batch Size: 5 gallons of finished beer.
Single step infusion mash at 151 F
11 lb German Smoked Malt (Beechwood smoked Rauchbier malt)
1 lb Carafa Special II
1 lb Chocolate Malt
1.5 oz of German Tettnang @ 60 min
1.5 L starter of White Labs WLP820 Oktoberfest/Marzen Lager (I use a stir plate, adjust as needed)
