Signature Brews for August

Hi! Here at C&S Brewery we have a special treat for Christmas, In August we will be brewing an Oaked Russian Imperial Stout w/2lbs Raspberries in the boil. We have named it “Quercus Rubra Stout” or Red Oak Stout for those who do not understand Latin. This beer is a 2.5 gal batch coming in at 11.4% ABV. This beer should take about 4 months to mature. Looks good. I have a question about " chill wort to 85 dg." Is this the temp to pitch the yeast, it seems too high. cheers.
