Sierra Madre Fermentation Question

I brewed a batch of Sierra Madre Pale Ale two weeks ago. Had it in primary for 7 days (krausen had settled down after 2-3 days of active fermentation). It’s been in the secondary for a week. It looks clear with a nice layer of trub. I plan to keg 3 gallons and bottle the rest. Is there any reason I can’t keg/bottle today?? Thanks!

IMO, two weeks is a little soon. Patience should be a required ingredient for brewing beer.

Yes, I’m trying to work on that. Thanks for the advice!

If your gravity is stable and the beer tastes good and you’re satisfied with the level of clarity there’s no reason not to bottle it, imo.
