Saison

I thought saison was a farm style brewed in winter at lower temps . But the specs for saison call for 70 degrees + brewing temp. what am I missing?

I believe you are thinking of bier de grade which fermented cooler than saisons and are then lagered. Saisons are usually fermented in the mid to high seventies, at least when I make them.

I would start my saison at 65° and let it ramp up freely after about 2 days of ACTUAL fermentation.

Well actually I pitch around 70 and let them run up through fermentation to high seventies then back them down again. Mmmm can’t wait for the warmer months to brew mine.

I’ve never had a saison and would like to try a commercial one before committing to making a batch. Anyone have suggestions for a good commercial saison? Thanks.

Depends upon what you consider a Saison. This is from Wikipedia:
“Saison (French, “season”) is the name originally given to refreshing, low-alcohol pale ales brewed seasonally in farmhouses in Wallonia, the French-speaking region of Belgium, to refresh farm workers during harvest season. Modern-day saisons are also brewed in other countries, particularly USA, and are generally bottle conditioned, with an average range of 5 to 8% abv,[29] though saisons at the more traditional 3.5% strength can still be found.
Although saison has been described as an endangered style,[30] there has been a rise in interest in this style in recent years, with Saison Dupont being named “the Best Beer in the World” by the magazine Men’s Journal in July 2005.[31]
Historically, saisons did not share identifiable characteristics to pin them down as a style, but rather were a group of refreshing summer ales. Each farm brewer would make his own distinctive version.[32]” The same types of beer were also brewed across Northern France.

NB’s Petite Saison fits this style/type. One of my favorites. Ferment it with WY 3711 at the low end of the yeasts range to accentuate the spice flavor.

I really enjoy duponts saison as a “traditional” saison…and boulevards tank 7 for a fruity saison…our hosts antithesis saison is fairly comparable to tank 7. Epic brewing in Utah has a variety of very tasty and unique saisons :smile:
