S-05 & Phat Tyre extract kit

Although I’m an AG brewer, I’d gotten a free extract Phat Tyre kit… so I thought I’d give it a try. I steeped the grains @165F for 20 mins and had the following grain bill:
8.0 oz Caramel/Crystal Malt - 60L
8.0 oz Victory Malt
1 lbs DME Pilsen
6 lbs Munich LME

The OG was 1.055, and I pitched a fresh pack of S-05 and fermented it at 62F… It’s been about 3.5 weeks, and it’s stuck at 1.018. That seems pretty high to me.

Is that how extract batches roll these days? I haven’t brewed one in a VERY long time…

Any ideas as to how I can get the gravity down?

Extracts almost always contain a higher amount of unfermentables than AG. When I was designing extract kits of my recipes for NB, I made sure to include some sugar to deal with that.

Good tip - I’ll remember that the next time I do an extract batch.

So, am I stuck with a 1.018 beer, then?

I never had an extract batch stop higher than 1.015. It sounds too high of a FG, especially with an attenuative yeast like us-05. Try rousing the yeast and raising the temperature a little.
