I Pitched this one at 75F yesterday afternoon. It’s been 16hrs, and I have a very vigorous fermentation at 68F. I’ll let you know how it turns out.

I bet you have a vigorous fermentation pitching at 75*. I think it will all be good and fine but I always recommend pitching a few degrees lower than your target fermentation temp. If you want 65* pitch at 62*. Those first day and or so is the most important time period for cool temps. In the past I would pitch no matter what, just to get yeast in there and to get fermentation started to reduce risk of infection. Now I’ve waited the night out for my beer to cool to optimal pitching temp with on ill effect. Good sanitation and there’s no problem waiting a while to cool in the basement or a swamp cooler.

You’ll be alright though. And that sounds like a great recipe. I love the torpedo and I love rye so both together should be great!!!
