Russian Imperial Stouts

My local homebrew club will brew a 100 gallon batch and divide it among the members. The one that really stood out had Nottingham+Safale US-05. I used Wyeast Irish Ale and there was a lot of London Ale used in the club. They were all good, but this one really stood out and everyone in the club was really impressed. Next RIS I make will have this combination of yeast.

It probably dried it out better. I like to use 007.

Definitely dry and wonderful flavor. I wish I could describe it appropriately.

I brew a really good RIS with S-04.

I’ve used S-04 in 2 RIS and they came out great.
My latest RIS I used WY 1332 northwest ale and I’m really,really liking this one.

Two weeks ago I brewed a 10% barleywine with S-04 that’s doing good so far.
