Using roselere yeast do I use in primary alone or with another strain of yeast in primary. Or should I add it to secondary ?
I add it to the wort and let it go…for a long time. Put it in the cellar and come back for it next year.
Or in a few months if you cant wait, but a Flemish sour beer really has to go through seasonal temp changes and time for it to develop full character…each organism works at different pH levels and temperatures. 20 months would be great.
