Just did this recipe last night. Not sure if anyone is familiar with this recipe, but it has a 90min mash and a 2 hr boil. The first hop charge is at 105 minutes. What is the purpose for the longer times? I assume the longer mash is just to make sure there is complete conversion, but not sure of the longer boil. I accidentally put my first hop charge at 70 minutes…because I was sampling my new IIPA. LOL. I guess we will see what happens!
Maybe the longer boil is becasue you collect more wort to increase efficiency? You could ask Bill Pierce here…http://hbd.org/cgi-bin/discus/search.cg … &where=all . I brewed it for my 100th batch MANY years ago and it was a fantastic beer.
