RIS/Partigyle...Need advice

Hey everyone,
Yesterday I did my 3rd all grain brew. A RIS that on a whim I decided I had the time to do a partigyle

I can post the recipe if needed…The the OG of the RIS Was 1.100 with the addition of 1lb DME(I was hoping for 1.110)
The second batch was 1.048 with the addition of 1lb DME

Now the questions

  1. I was planning on making a Schwarzbier with the 2nd batch but the only yeast I have on hand are US-05, WLP833 and 1450…I can stop at the LHBS on my way home this morning if needed.

  2. I ran out of time at the end of the brew session, I put it in a sanitized carboy with a sanitized piece of foil covering it and put it in my cellar (45F) currently. I did not oxygenate the wort yet. Do you think there’s any problem with an 18hr lag time to pitch the yeast?

The only problem is that some unwanted yeast (or other beasty) has already pitched itself. I’d pitch it as soon as possible. Use the 05, call it SchwartzAle. May the Schwartz be with you.

Was there a typo or was the second runnings really higher than the first?

Yes, that was a typo (fixed now) Sorry, I was rushed at work.

It turns out that with the cold snap, my (cellar) was closer to 38F…I ended up letting the batch warm up to about 54F and pitched the WLP833…It’s now happily bubbling away and I just moved it right outside of the “cellar” where ambient is 46F.

Honestly, as I said, I did this on a whim…Not too concerned it it doesn’t work out.

WLP833 is a great yeast, ought to make a good schwarzbier.
