once we are all past the chuckles and comments… I made about a gallon and a half more beer as I had bottles to put it in.
anyway, I have about 1 1/2 gallons of brew in the bottling bucket and it has been activated already with a boiled honey mixture… the rest of the brew is already bottled and safely in the basement. the clock is definitely ticking.
I can swing by the brew shop tomorrow evening and bottle then, but that is going to be about 24 hours later than intended…
How much time do I actually have here? Should i boil a secondary batch of sugar?

I’d think that if your sanitation was good, you should be alright. I can’t say for sure, but you may have some problems with oxidation with the beer you still have to bottle. Others may chime in more specifically on this. I’m not sure how you mark the beer you bottle (I used to just write on the bottlecaps) but I think I’d mark the beer differently so you can be sure what you’re drinking if you taste anything weird.
If you’ve already mixed in the priming solution, and I think you did, I’d make sure to stir it back up well with a santized spoon to prevent stratification.
Either way, bottle it and see what happens.
if you have commercial beers in the fridge. start drinking :cheers: .
get new bottles as soon as you can. anything is possible. cover the top with sanitized foil or surran wrap. it’s more difficult to get an infection once the beer is fermented due to the low Ph and alcohol content. i would be concerned about remaining yeast munching away at your priming sugar.
but if you don’t have bottles on hand. and you cant get them till tomorrow. there’s nothing more you can do but hope for the best. could easily be just fine
Got any 2 or 3 liter soda bottles? If you don’t it might be worth the trip to Wal-Mart to pick up some generic soda and just dump the soda, sanitize, then bottle.
I usually keep 4-5 2 liter bottles on hand, I hate wasting that sweet sweet beer.

I had a few old Mississippi Mud growlers down in the basement. I sanitized them and filled them, leaving me with two and half (or so) bottles worth left in the bottling bucket. i suppose that’s an acceptable loss for this mistake.

Class?? What is that? Last night I ended up a little covered in beer as I was bottling and sticky. I ended up about a bottle short and sucked it out of the siphon!
The look the wife gave was priceless!
