Racking to secondary

Brewed nb belgian tripple on Saturday, pitched 1.5 L starter, used blow off tube. Yeast really got going after about 10 hrs. It has started to slow down. I had planned on leaving in primary for 2 weeks and then racking to secondary for 2 months. I know Belgians get character from the yeast. Should I rack to secondary after 1 week, 2 weeks, or wait longer? Thanks.

I would go with 3 weeks. I am brewing the Number 8. Another Belgian ale. I took a reading at week 2 and the SG was 1.020. This is week 3 and the SG is down to 1.016. I think you’ll be rewarded with a little extra patience. I’m betting the end result will be a much clearer beer. I took a swig of my hydrometer sample and it tasted great already. The taste is already close to the Rochefort 8. I’m also keeping the remainder of the hydrometer sample in the fridge just to track how it is clearing. This will give me a preview of the final product. I hope that helps.
