Porter/stout for anise extract?

I am trying to replicate an old family cookie recipe. The cookies were made with anise extract and frosted with sugar frosting.

I am trying to figure out which porter or stout recipe might work best. Any ideas?

Also, I found some very high quality star anise that I can use. Has anyone ever brewed with it? Any tips would be great.

I’ve never made an extract with beer, but my wife makes vanilla extract all the time with vodka and I’ve got a lemon extract going right now using rum.

Are you making cookies or beer?

Just getting back to this… but,

Yes, I am making beer, not cookies.

The idea would be to use the star anise in secondary.
