I don’t think the mash pH has much to do with a weak tasting brew… You are in the ideal range with both the pH’s listed above… Is 1.042 the targeted SG? Sneezles61

1.042 was the target SG. Still need to give it 3 or 4 weeks after bottling for the final taste test.

If it was kegged you could play with the carbonation a bit but being bottle conditioned maybe you could try different serving temperatures

Good idea. I think I will carbonate it on the high side. Serving temperature of the bottles from my refrigerator will be 36°. Grip the glass in both hands to warm the beer and let some CO2 off gas if there is carbonation bite.

One of the things I’ve learned about drinking beer since I started brewing is what a little change in carbonation or temperature does.

Yes it’s easy to let it gas off in the glass. If it’s under carbonated not much you can do about that
