Overnight chilling my first kolsch! Have a starter going right now to pitch tomorrow (going to decant off the trub, did a partial chill post-boil).
Does anyone have any other style recommendations they’ve tried with this yeast? WL’s website has a comment that says someone had great results with it in an AIPA!
Just made a faux CAP with US-05, and it turned out great, but I thought a few ‘lager yeast’ characteristics would have enhanced it quite a bit. Going to make another faux CAP to drink with WL029 when lagering my spring/summer beers…got me thinkin in a good way!
