Open fermented cider

Hi there.

I was originally planning on making a graff by combining a biere de garde with 3 gallons of cider. Time got away from me, so the project has been scrapped. I now have 3 gallons of cider in the basement I have to decide what to do with. It is starting to ferment. I was thinking of sticking the carboy on my covered back porch and cover the bunghole with several layers of cheese cloth, no air lock. I will leave it out there until it gets too cold outside.

It should be just fine. I have one batch that begin fermenting in my refrigerator all by itself at 39 F. The natural yeast can ferment pretty darn cold. Let it go and see what happens!
