I currently don’t have an extra refrigerator to brew Lagers but decided I wanted to try NB’s extract Octoberfest kit. I was going to use California Lager Yeast. I used that yeast to brew a batch of Biere De Garde and really liked it.
When I went to pick up the kit the NB sales person convinced me to use their German Ale yeast to stay more with the style of the brew. Just as when I brewed the Biere De Garde the Octoberfest kit recommends 2 months in the secondary. My question is now that I’ve changed to the German Ale yeast do I still leave it in the secondary that long or should I bottle after 4 weeks in the secondary like most of the kits it’s typically used in recommend.
I’ve got to get that extra refrige so I can start doing lagers…
