Nottingham or 04 to replace 05?

Just had my first child a couple weeks ago so I’ve been kind of out of it for about a month ha… anyway, going to brew another batch of a Torpedo clone. I thought I had everything, but when I looked in the fridge to make sure I had 05 yeast, I realized I only had 04 and Nottingham. I don’t want to put the brewday off so which would be a closer match?

Either one will make a good beer.

Personally I’d go with the Nottingham. Has a similar attenuation and ive found that it is a very neutral yeast

definitely Nottingham if those are the only choices. I tried to make a “maltier” AmIPA with S-04 in two different batches and it just came out weird. Tart almost and certainly not dry enough.

Notty will chew through anything, but yeast affects flavor more than you think. Maybe I’ll try it on an English style, but after my experience I was not particularly pleased with S-04.

Notty, however, did take a 1.11 braggot down to 1.014! Its still an English yeast though, I would be curious as to a side-by-side tasting with your finished beer and Torpedo.

Nottingham might even be a direct ancestor to US-05 so definitely go with Nott.
