Hey fellas, I have the NB Cream Ale extract kit. I have three different Yeasts. How do yo know which Ale yeast to use. I know that NB always suggest Wyeast since they sponsor NB. I just want to know how to pick an Ale yeast for an ale or any beer for that matter.
The yeasts I have on hand are the WL California Ale, Wyeast Beire De garde, and the Safal US-05 Ale Yeast. Which should I use and why?

WL California Ale or US-05 would be the options, they are about the same yeast strain. Just different suppliers.
The yeast manufactures have a list of styles each strain is appropriate for.

There are usually more than one strain option for a style. From there it is a personal choice on what the different yeast bring out in the beer. Malty/dry, fruity/clean…

I have made cream ale with wyeast 1084 Irish ale and with S-04. Don’t ask why I just did it. I would definetely recommend the WLP 001 for the high attenuation and flocculation. I love seeing clear cream ale it just looks absolutely amazing.
