Mystery solution

Yeast nutrient = nitrogen, I get. Now nitrogen is available in many forms, having read a few labels, it appears that virtually all forms usable. My question, is used in appropriate quantities, which type of nitrogen is most appropriate. Agriculturally many forms are available, would ammonium sulfate be prefered over urea or ammonium nitrate. Now it be clear we are talking simple mead no flavors added simple nectar.
