have you used the williamette hops before cause i havent brewed with it before
Looks good to me, perhaps a bit more crystal in there than I would use (I almost never add carapils), but I like my beers to be on the dry side.
Williamette is the US version of UK Fuggles (which the Belgians grow as Styrian Golden). It gives a pleasant earthiness. In my opinion a very good, underated hop. I’ve never paired it with Cascade, and can’t say if it would complement or clash.
I pair cascade and willamette in my house APA. Nice compliment but I don’t know how well it will go with the simcoe and with all the dry hops it might get lost completely. I’d say either the darker crystal or the munich but maybe not both.

http://hopville.com/recipe/1689561I use crystal 20 and 40 in both my apas and ipas. Makes for a less malty, drier brew.
personally I would not use more than 10% crystal malt and willamette is a mild hop you probably wont be able to detect it in a high IBU beer featuring big AA American hops.
