This past saturday, I tried one of my tweaked Caribou’s. Virtually no carbonation. I looked at all of the bottles, and only a few had any sediment in them (after two weeks in the bottle.) I moved them to a warmer spot in the house, and now 5 days later, I got a satisfying “hiss” when I opened a bottle.
Still not as carbonated as I like, but I have patience. I wait another 4 or 5 days before I try another. As for the taste, it has one of the most complex I’ve ever made. Medium bitterness, malty but not sweet, with chocolate up front that mellows to caramel in the finish. I look forward to finding out how the flavors will change as this brew matures.
No offense intended: I’d find this post interesting if you had mentioned what the tweak was.

Here’s the short version: "…I brewed the carribou today, and decided to add a pound of agave. I also put in 1 1/4 ounces of centennial hops for the full boil.
I have no doubt that the final product will be different than the pure kit (which I’ve heard great things about) but I’m sure I will like it. The wort is by far the best tasting I’ve ever made! The starting gravity came in at 1.055, just 3 points above the kit target.
BTW: Visible fermentation in less than 9 hours. Gotta love fresh yeast!" :cheers:
Agave eh? Sounds interesting! I once put some bergamot in an IPA, and it came out quite nice blending right in with the citrus notes from the Columbus hops I used. Not sure what Agave actually tastes or smells like due to my only experience with it being Tequilla, and that usually gives me peppery tastes on the palate. Let us know how it turns out! :cheers:
