I just started my first large batch of mead ale. Hopefully I have the recipe adjusted from my two small batch attempts.
24lbs light amber honey
2oz. Pride of Australian Ringwood hops as bittering hops
2oz. El Dorado hops as bittering hops
4oz Cascade hops as aromatic hops
Wyeast 4347 Extreme Fermentation yeast
White Labs WLP099 Super High Gravity Ale yeast
4oz diammonium phosphate and urea
Plan to ferment 5 months
Made 6 gal S.G. >1.120
Hopefully it will turn out drier with citrus and honey notes.
