Maple sap instead of water

Hi, I’m a rookie brewer, extract only. I have now made about a half dozen kits but am thinking about getting creative. We just tapped our maple trees here in Wisconsin. No sap yet, but it got me thinking about using raw maple sap in place of water in my wort…NOT syrup, the unconcentrated watery stuff that comes straight out of the tree. The gravity of maple sap is supposed to be about 1.009.

Anyone have any thoughts on how this would turn out? Also, any ideas for a recipe or a kit would be appreciated. My basic research indicates a light not too hoppy beer so what ever the sap brings can be discerned.
