Made a batch last night

4 Gallons of Musselmen’s cider. 2lbs Brown sugar, 1lb honey and 2 cinnamon sticks boiled in 1/2 gallon of water for 10 minutes. Pitched with Wyeast 1056 (it is what I had on hand). OG was just north of 1.060. Hopefully it is ready by Thanksgiving. I will kill the fermentation at the end with potassium sorbate and back sweeten with frozen cider concentrate.

Very similar to what I did for a halloween party. 1 month was pushing it and it wasn’t as clear as I would have liked but it was a crowd pleaser. I transferred to secondary after 15 days and then added the cinnamon. I left in in my cellar at about 55F for another 7 days before I kegged and carbonated.
