M-type Imperial Amber Ale

This is a beer specifically made for my wife. She insisted that I stick with my Stellar theme of beverages (Io Golden Strong Ale, Nemesis Quintupel, Europa Eisbock, etc), so this beer is named for the Amber colored M-type asteroids. Amber colored and carries her initial. Win. Win.

She likes strong, malty, balanced ales with some toasty bread like flavors. I’ve been working on this one for about a year to get it right.

M-type Imperial Amber Ale
Day 0 - 10/18/2014

Specialty Grains
6 oz Aromatic
4 oz Biscuit
4 oz Special B
1 oz Chocolate
0.5 oz Roasted Barley (color adjustment only)
Steep at 170 F for 30 minutes.

Add 12 lbs Northern Brewer Amber LME. Bring to a boil.

Hop Schedule
2 oz Cascade for 1 hour
1 oz Williamette for 15 minutes
1 oz Williamette for 10 minutes
1 oz Williamette at flameout

Also added Whirlfloc and Wyeast beer nutrients at 15 minutes.

Pitched 2 packs of US-05 rehydrated with GoFerm 15 minutes.
