Lambic without Aged Hops?

So I want to start up a series of sour beers, but the main thing that is holding me up is having enough aged hops.

Curious, will using just using 1/2oz of EKG or Hallertau at 60mins do the trick? It’s to replace closer to 3oz of dried hops.

Some of the experienced labic brewers on this site will tell you to target 8-10 IBUs with a non-catty hop (like the ones you mentioned) and you’ll be fine. At least that’s what I got from a search on the subject a few months back. The other alternative is to accelerate the aging of your hops by a low-temperature bake in your oven for a few hours. That will drive off all those unwanted hop oils. The later is the option I ended up taking. I baked about 3 oz of home grown Goldens-smelling hops, and they came out of the heat with no real aroma left in them. About 150F if I remember right.

I’d probably bake about 2oz of the hops to make up for 3oz of aged hops, does this sound about right?

You must be trying to dry the hops differently for the sour style beer? I thought I read that you shouldn’t use heat above 140 degrees when drying hops. I’m assuming that’s what the talk is about reducing the hop oils in the leaf hops?

That’s a really good price per oz. Have you used them? Are they aged well?

I would just use a small amount of low AA hops (or source the aged Willamette’s) before trying a low-temp bake.

I have not used them. But they are from 2007 harvest. So five years of age. Hope they are what you are looking for.

I made a pLambic about 3 months ago and just used .5 oz of Hallertau for @ 60min. IBUs were around 9. From what i’ve read if not using aged hops like said above, target 8-13 IBUs
