I recently made my first lager, Czech Pils. Used WY2124 with a stepped up starter. 2 week primary @ 50 then a 5 day rest @ 66. Back in ferm chamber, slowly dropped to 38. 5 weeks @ 38. I have 2 weeks left until bottling. My question is: will 3/4 cup corn sugar do the trick, or would i be better off adding a small amount of yeast to bottling bucket? If so, do you just put a small amount in with the priming sugar & stir? I read somewhere that lower gravity beers should be fine with just sugar, but after 8+ weeks, don’t want to screw it up now!! Any replies appreciated. Thanks!
Last month I bottled an Oktoberfest(OK maybe a Novemberfest) brewed back in November. It carbonated well but took over 3 weeks. About 3 weeks later I bottled a Cascadian Dark Lager and added 1/2 packet of ‘Munton’s cheapo’ yeast. It did carbonate quicker- 2 weeks, and has a thicker head.
So, OK if you don’t, maybe a little better if you do. Peace of mind= add a little yeast.
OH, forgot, I rehydrated it and then added it to the cooled sugar solution, then siphoned my beer on top.
You’d have to go way longer than 8 weeks to ‘need’ to reyeast. I wouldn’t, but go ahead if you’re worried, it won’t hurt it.
Thanks alot guys! I’ll just go with 2/3 cups corn sugar(per recipator) & roll with it. My house is only about 67, so i’ll give 'em a few weeks. Thanks again.
