Krausen

After 2 and a half weeks should my homebrew be clear on top or will there still be some krausen floating on top. I am afraid I may have infected beer. Should I bottle it or dispose of it and start over.

Some yeasts take longer to drop than others. Take a gravity reading today, then another in two days, and see if the yeast is still working and if you’re at your desired FG. If the yeast is done and you’re happy with the FG, you can gently swirl the fermenter to get the krausen to break up. Otherwise, rouse the yeast off the bottom of the fermenter, raise the temp a little, and encourage it to finish up.

What are you brewing and with what yeast? I recently brewed an Oatmeal stout that had krausen after 3.5 weeks and was very slow to finish up.
