Kolsh Safale 05

Hi.
I have the NB Kolsh recipe kit with Safale - 05 dry yeast. Can I successfully make this beer in fermentation room that is going to be approx. 60-65 degrees F?

S05 will ferment in the mid 50’s.

You can if you control the wort temperature when fermentation begins. SA-05 will increase the wort temperature 5° to 8° during the first few days of active fermentation. A tub of water, wet t-shirt or cotton towel, and a fan can bring the wort temperature down to the low 60s. Near 70° and over the yeast can produce some undesireable flavors. After vigorous fermentation is complete the wort can be allowed to rise to room temp.

You can make it at that temp, although I think the Kolsch yeast does add a lot of German character to the beer. The NB kit describes it as “spritzy” and when I made it I thought that was a truthful description. Since then I’ve made a few brews with the German ale yeast (1007?) and I don’t think they are too different. Its that sulfury smell that seems to be a part of the German brews that both 1007 and the Kolsch bring to the beer.

I’ve made the Kölsch and Honey Kölsch a couple of times with US-05. I fermented much lower, 50F, and came out with a very crisp tasting Kölsch style brew. If you can, I suggest getting the temp as low as you possibly can to get the cleanest brew you can. I normally ferment US-05 at 63F.
