I’ve got a 4th generation of us-05 that I’ve been using for ales only. Would it be ok to use my 4th gen yeast for a kolsch that will be lagered or have they already learned to be productive at higher temps?

No problems. Just pitch a bucket full if you are going really cold. I have used US-05 down into the low 50’s for sure.

you could, but you won’t get a kolsch!
the right yeast is such a huge part of the kolsch flavor. see this previous thread:
