I need a yeast suggestion

I’m making a wheat malt porter. I have 4 dry yeasts on hand. (Munton and Fison, S-04, S-33, S-05)

Here’s the recipe.
4.75 lb wheat LME
1.75 lb light LME
8 oz Midnight wheat malt
10 oz Crystal 60
4 oz Chocolate malt
.65 Northern brewer hops at 45
.65 Willamette hops at 20

I’m using a full boil.

I would probably use the SO-4. Really depends on what you want though. The other 3 are fairly neutral.

I agree last season I did some porters with us 05 and they came out much better this year using 04

Another vote for S-04 in a porter!

S04 unless you are in a hurry for carbonation :slight_smile:

I really like s-04 but would hate to try and clean it out of a small necked carboy.

Any of them will work fine. I tried to decide but just can’t make up my mind. Maybe do a split batch and try 2 or 3 of them and see what tastes best for future reference?!

Sure any of those would work but don’t you think that flavor you get from 04 works well in stouts and porters. I just did a taste comparison from my last year rum barrel porter 05 with this years 04 and everyone liked the 04 better.

I’m not a fan of 05, haven’t tried the 04 yet, love Nottingham though.
