How much yeast to use per gallon

I just got a new book about cider making…I don’t see anything
about the amount of yeat to use.The book says to use
Premier Cuvee or Liv-1116…Does the N.B HAVE this?
Like I said I see no mention of the amount.

My plan is to do one gallon at a time so if it isn’t right,I will
not have wasted much…Thank you…Johnny

I believe NB has those yeasts. I use about 1 pack of dry yeast per 5 gallons with good results. If you want to play it even safer than that, use the equivalent of 1 pack for every 3 gallons, and you’ll definitely get good results. Somewhere in there is the right amount.
