Your sample for OG probably came from part of the wort that was heavier to the fermentable sugars in the fermentor. Your OG will be the same as the recipe OG if you used all the fermentables and the volume in the fermentor is the recipe volume.

The yeast will take care of mixing the top off water and the boil kettle wort.

Just looked the beer up. That is a big beer with a lot of hops. You are going to need a lot of yeast to ferment that one. You will also need to control the fermentation temperature. Yeast produces heat as it ferments. Your beer will always be warmer than the ambient temperature during fermentation. This one could go 10°F over the ambient.

Have you used a pitch rate calculator for this beer? Do you have fermentation temperature control planned? Which yeast will you use?

I didn’t use a calculator this time, but I have in the past. I did to a single stage starter.

I have no means of fermentation control at this point, so I just went for it. I’m at about 16 days in primary right now. Took a reading a couple days ago on the gravity and it is still a bit up. I think I’ll wait a few more days and go to secondary. I drank the sample I pulled. YUM! Already tasting great (and boozy).

And a lot of O2. A big beer like this needs PLENTY. What did you do for O2?

I have a small O2 tank and appropriate stone. I gave it plenty of O2 before pitching.
