I’m looking at picking up the Holiday Brickwarmer kit this evening, but NB’s website lists Wyeast 1028 as out of stock.
It list S-04 as the dry alternative.
Anyone here have any opinions of using 04 as a sub for London Ale?
I’ve never used it but I tend to lean toward US 05 as my goto American Ale yeast.
Mine is 10 days in primary. Fermentation is starting to slow down. Loving the cool temps lately. Ambient temps have kept it at a constant 60F. I used some harvested Wyeast 1056 with a starter as I’m cheap, it ferments clean and that’s what I had on hand. I’m skeptical of the four week claim. Thinking at least six with this ABV. We shall see.
Kinda late posting, but using 1028 to ferment everything seems to settle and drop out by 7-8 days. It’s been around 2.5 weeks in the primary now and is nearly clear.
I’ll likely move it to a secondary this weekend and perhaps spice it up a bit. (cinnamon and/or nutmeg)
