I just bottled my ale from the fermentation jug. My OG (using a digital refractometer) was 1.09, FG was 1.13 which comes out to 10.1%.
My fermentation temp was fine, based on the instructions I got from Northern Brewer. I am a little concerned it is too high. Will the two week bottling settle it down? Or at least mask the alcohol. This was my first attempt. It stopped fermenting from what I could see about 3 days before the 2-week mark but I just let it sit a few more days. It smells great.
This recipe, along with the hop schedule should mask the boozieness pretty well. Aging will help a little as well. Have you dry hopped yet? If not wait to do so until you have aged it. But the commercial beer is better served young.
Which Pliny recipe are you using? I have only brewed the Plinian Legacy kit which has a target OG of 1.070. If you brewed the Plinian Progeny, it has a target OG of 1.090 which means you hit it right on the nose. Personally I would let it sit on the cake for another week or two before dry hopping and bottling to make sure the yeast are completely done.

Thanks for the replies. I used the pliny 1 gal starter kit. I don’t think it calls for any more dry hopping. It went from the fermenter to bottling. It’s pretty turbid. Hopefully this will clear up in two weeks.
