Heffe Weiss

What is a good ratio of wheat malt to base malt for a simple heffe weiss? 60/40 50/50 70/30?

Ingredients: By German law, at least 50% of the grist must be
malted wheat, although some versions use up to 70%; the remainder
is Pilsner malt.

So, really up to you. Search for Jamil’s recipe if in doubt.

50% or 60% are the most common but it somewhat depends on how you like your Hefes and what you are using in the balance of the malt bill.

I really don’t think it matters too much. 50-60% is very common.
