First time kegging question

After carbonation is complete, is it viable to leave the co2 valves open and on at a good pouring PSI? Or after you pour all the beer you want do you shut of all valves and co2 until you want to pour your next beer? Thanks and any feedback would be helpful.

leave it on. Unless you have a leak. But then you need to fix that anyway.

Yup, leave it on. I carb my kegs at about 10psi. After a week they’re good to drink. After 2 weeks they’re perfect! I then usually turn the gas down a little bit to like 7-8psi. That’s just what works with my system and lines. You’ll learn what works for your setup over time.
